Executive Chef – Craig D’Cruze
The MacEwan Conference and Event Centre is proud to present our Executive Chef Craig D’Cruze. He brings an unrivalled passion for food and more than fourteen years of experience to our kitchen.
A home-grown talent and graduate of the culinary arts program at the Southern Alberta Institute of Technology (SAIT), D’Cruze has worked in some of the finest and most reputable establishments in the city including the Delta Calgary Airport Hotel and the TELUS Convention Centre – Calgary’s largest conference facility. He has worked throughout North America for Marriott Hotels, opening new properties in Halifax, Orlando and Seattle. Combining his thirst for adventure with his love of food, D’Cruze travelled the world to taste new foods, integrating them into his style of cuisine. As a student of the culinary arts, he continues to challenge himself and constantly increasing his knowledge of ingredients, cultures and food. His world-class training and experience helped him master his craft, and he is devoted to the inextricable link of style and substance in creating culinary works of art.
Not afraid of a little competition now and then, Chef D’Cruze has proven his talents in a variety of culinary challenges including appearances on Food Network’s Chopped Canada, the Thrill of the Grill and Celebrity Hors D’oeuvres. He prides himself on using fresh, local and sustainable ingredients as available to present the most delightful and creative dishes. True to our Alberta heritage, AAA Canada Beef is at the heart of some of his most popular and tantalizing dishes.
